Just make sure your roots look healthy before you buy them. Healthy roots have a white-ish hue to them while dead roots look, well, dead.
If you choose to grow asparagus in your garden or greenhouse, make sure to give them plenty of room. They have large root structures. Also, make sure that when you do harvest to leave some shoots behind so it can continue to be a healthy, productive plant.
